Grate the crust of the small bread rolls. Keep these crumbs. Cut the
bread into pieces in a terrine dish. Boil the milk with the vanilla pod,
sprinkle over the bread pieces. Leave to macerate for about 5 minutes.
Mash with the fork and mix. Add the sugar, egg yolks, kirsch and the thinly
sliced apples. Beat the egg whites until stiff, fold delicately into the
dough. Butter a bread pan, pour in the apple dough. Sprinkle with bread
crumbs, dust with a pinch of cinnamon and top with a few tablespoons of
butter. Cook in a hot oven (400F) for about 40 minutes.
